I'm currently a second year Masters student in food science and technology at Iowa State University. I got a BS in Food Science from Iowa State as well. I hope to graduate in August of 2008.
Most people don't really know what food science is. Well to make it simple Food Science involves all area of food production in industry. all the food that you see at the grocery store has gone through product development, quality control, microbiological testing, process engineering, packaging, and storage control. I hope to work in research and development making new food products.
My current research focuses on resistant starch in Latin American corn. I've been doing an initial screening of 30 different specialty grown corn lines for resistant starch. The next phase of my research will be to study the high resistant starch lines further and eventually create a Latin American food product using my high resistant starch corn.
